Therefore, fresh eggs must have a cooling process (ie pre-cooling) before they are placed in the cold storage. The pre-cooling temperature is generally 2 to 0 °C, and the relative humidity is about 90%. After about 24 hours, the egg temperature can be gradually lowered before storage.

Fresh eggs should be neatly arranged in storage, the egg boxes should not be against the wall, and a certain gap should be left between the egg boxes to facilitate air convection and reduce the growth of mold. The temperature and humidity in the cold storage should be kept stable and not fluctuated. The temperature of fresh eggs stored in the cold storage is about 0 °C, and should not be lower than -2.5 °C, otherwise the moisture in the eggs will freeze and the eggshell will break. It is advisable to keep the relative humidity in the warehouse at about 90%. If the humidity is too high, mold is easy to multiply; if the humidity is too low, it will accelerate the evaporation of water in the eggs and increase the natural dry consumption. The quality of fresh eggs should be checked regularly in order to understand the changes in the quality of fresh eggs during storage and to better determine the future storage time.

For example, when storing meat, if the temperature in the warehouse is only about -14°C, and it is stored for a maximum of four or five days, the meat will deteriorate. When storing meat, aquatic products and other items in a freezer, the temperature of the warehouse must be kept below -18°C. Therefore, in general, a refrigeration system with better performance should be used, and fresh meat can be stored in the warehouse for more than half a year.
